Apple Pie Breakfast Barley

Sick of oatmeal? Switch up your grains and try this Apple Pie Breakfast Barley.



Switch It Up


It's true what they say - variety is the spice of life. Not only that, variety is the key to a healthy gut! Different foods and types of fiber feed different types of bacteria in the gut. It's also important to switch it up because, without any variety, you'll likely be missing out on nutrients. Vary your proteins, grains, veg, and fruits to get the full range of benefits and nutrients and to promote a diverse, healthy gut microbiome.



Ingredients

  • 1/3 C barley + 1 C water

  • 3 tbsp non-dairy milk

  • 1/2 tbsp maple syrup

  • 1/2 apple, chopped

  • 1 tsp coconut oil (or butter)

  • 2 tbsp walnuts, chopped

  • 1/2 tsp cinnamon, divided

  • 1/8 tsp nutmeg

  • pinch of sea salt


Directions

  1. add barley and water to a small pot, bring to a boil, cover and simmer for 20-25 minutes

  2. drain barley then add back to the pot (keep the heat on low)*

  3. add in the milk, maple syrup, spices, and walnuts, stir to combine and cook for 4-5 minutes until the milk has cooked into the barley

  4. when the barley has about 5 minutes left to cook, heat the coconut oil or butter in a small saucepan on medium heat, add the apples and 1/4 tsp cinnamon and cook about 8-10 minutes until fork tender

  5. top finished barley with apples, sprinkle of cinnamon, and more chopped walnuts or other nuts or seeds of choice

*you could also use pre-cooked barley and skip to step 3 and heat it up on the stove with the milk and spices, just give it an extra couple minutes to heat up
