Decadent and smooth with the fresh taste of dill, this Creamy Dill Sauce elevates even the simplest of meals.
Ingredients
1 C cashews
Juice of 1 lemon (about 4 tbsp)
Zest of 1/2 lemon
1 tsp salt
2 tbsp olive oil
1/4 - 1/2 C water
2 tbsp fresh dill, chopped (can use 3 tbsp if you want a stronger dill flavor)
Directions
Soak cashews for 1 hour in just boiling water or for at least 6 hours in room temp water
Drain cashews and add to blender with all other ingredients, but only using 1/4 C water
Add more water 1 tbsp at a time until it reaches a good consistency - if you use a blender, you may not need as much water as you would in a food processor
Drizzle on grain bowls, salads, or roasted veggies, or use as a spread on a sandwich or wrap.
