Spicy Red Lentil Tortilla Soup

Looking for a hearty, satisfying soup for meal prep or dinner for the family? Try this Spicy Red Lentil Tortilla Soup


I have been making this soup on repeat the last few weeks - it is just so good!


Lentils are an incredible source of fiber and plant-based protein (18 g per cup!) and they make this soup hearty, filling, and so satisfying.

The peppers in adobo sauce (see photo to the right) are key for flavor - you can find these at most grocery stores in the international aisle or with the canned tomatoes.


I made the tortilla strips out of Siete Grain-FreeTortillas but you can use any type of tortillas - cut into strips, lightly coat with avocado or olive oil, bake on 350F for 5-8 min, check on them every few minutes to make sure they don't burn!


Ingredients

  • 1 yellow onion, diced

  • 2 stalks celery, diced

  • 2-3 large carrots, diced

  • 1 jalapeño, deseeded and minced

  • 4 cloves garlic, minced

  • 1, 7oz jar chipotle peppers in adobo sauce

  • 2 tbsp avocado or olive oil

  • 1, 15 oz can diced tomatoes (I like to use fire roasted, no salt added)

  • 1, 15 oz can full fat coconut milk

  • 1 C red lentils (rinsed)

  • 1 tbsp chili powder

  • 1 tbsp cumin

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 2 tsp oregano

  • 2 tsp coriander

  • 4-5 C greens (I used green cabbage, can use kale, spinach, etc. - thinly slice cabbage or kale, spinach can go in whole)

  • 1 C corn (I used frozen)

  • 5 C broth - can add more broth for more soupy vs thick stew

  • juice of 1 lime


Method

  1. Heat oil in large pot on medium heat, add in onion, celery, carrots, and jalapeño and cook for ~5 min until soft

  2. use a fork to take the chiles out of the jar and chop into smaller pieces

  3. add spices, minced garlic, and chiles (with all the adobo sauce), cook 1-2 minutes stirring frequently

  4. add in broth, diced tomatoes, coconut milk, cabbage (or other green - if using spinach, wait until the last 10 min to add it in), corn, and lentils, bring to boil, cook for ~20 min until lentils are tender

  5. add juice of one lime, top with sour cream or Greek yogurt, sliced jalapeños, cilantro, and tortilla strips
