These are the best to keep handy for a sweet little treat and are actually filling from the fiber in the dates. Dates are also high in potassium and B vitamins and taste like caramel when frozen. I added cinnamon to the chocolate but you can also add a dash of cayenne for a little kick.
Ingredients
- 10 Medjool dates (with pit)
- 2 tbsp nut butter (cashew, peanut, almond, etc.)
- 1 tsp cinnamon
- 1/2 C vegan dark chocolate chips
- 1 tsp coconut oil
- flaky sea salt like Maldon salt
- 1 toothpick for dipping in chocolate
Directions
- Slice dates down one side lengthwise, remove pit, and spread date like a butterfly
- Spoon in small amount of nut butter into each (I used cashew butter this time) - don't overstuff as it will spill out the ends and make it messier to dip in chocolate
- fill a pot with 1 inch of water then place a stainless steel or other mixing bowl on top (making sure the bottom of the bowl won't touch the water) and add in the chocolate chips and coconut oil
- turn burner on to medium heat, and melt the chocolate, stirring frequently
- when the chocolate is just melted, dip each date one by one in the chocolate using the toothpick and place on a parchment paper lined tray
- top with flaky sea salt and put in fridge to harden
- store in fridge or freezer - I prefer them in the freezer as the date tastes just like caramel even though they are harder to chew, but they are just as delicious when kept in the fridge
