Made with just 5 ingredients, these perfectly sweet Tahini Date Cookies are a heavenly match for your morning cup of tea or coffee.
Tahini, made from ground sesame seeds, has a slightly bitter taste compared to other nut/seed butters. Dates, on the other hand, are incredibly sweet, which balances out the bitterness of the tahini perfectly. These soft and chewy cookies go so well with a cup of coffee or tea in the morning or crumbled on some vanilla ice cream for dessert.
Ingredients
1.5 C old fashioned oats
10 Medjool dates, about 1.5 C (with pits)*
1/2 C tahini
1/2 tsp sea salt
1 tsp cinnamon
* pre-pitted dates tend to be very dried out, but if that is all you can find, soak them in hot water for 10 min then drain and blend as directed
Directions
preheat oven to 350
pulse oats in food processor until they reach a flour-like consistency
remove pit from dates and add in with remaining ingredients and blend until combined
roll into balls (about 2 tbsp in each) then flatten with palm and form into cookie shape, makes 12 cookies
bake for 10-12 min
